Bakery Production Mixer

The Bakery Production Mixer schedules all mixes according to daily and weekly production demands. The Mixer is primarily responsible for mixing muffin and quickbread batters, fillings, glazes and icings, bread pre-ferments, scone dough, and cookie dough. Works independently and collaboratively to ensure steady production and quality standards are met according to Troubadour’s mission, goals, and values.

  • Organize and set-up area and equipment at beginning of shift
  • Precisely scale, mix, and portion formulas with accuracy and care
  • Organize ingredient storage, restock and rotate ingredients daily
  • Coordinate with bakery manager to order ingredients
  • Communicate and collaborate on the timing and progress of batters and mixes with bakery team
  • Safely utilize all mixing, dividing, and baking equipment and report equipment issues to manager
  • Maintain cleanliness of area and equipment in accordance with federal, state, and local food production handling procedures throughout shift and at shift close
  • Ability to stand, walk, squat, and lift for long periods of time.
  • Ability to lift between up to 55 lbs. repetitively and at various equipment and bench heights (e.g. dividing bins of dough, pulling dough from mixer bowl, or lifting bulk ingredients).
  • Ability to push, pull, and/or maneuver up to 300 lbs.(e.g. loaded bowl lift) without assistance. 
  • Attention to detail and formulas when measuring ingredients, mixing, and portioning.
  • Energy, flexibility and willingness to pivot into different area tasks when necessary. 
  • Ability to develop and maintain effective, collaborative working relationships and communication.
  • Ability to learn quickly, multitask, and work at a consistent, steady pace to support team members and production efficiency.
  • Familiarity with the safe operation of all bakery equipment. 
  • 1+ year of industry or production experience in mixing, shaping, and baking artisan or other breads preferred but not required. 
  • Culinary or pastry degree preferred but not required
